Summer Time Sweetness

Hey you! First of all do let me apologize for the ridiculous lack of content. I have been so fed up with everything that is going on that I barely have any time anymore. I am going to try to squeeze in a little time for blog posts, so expect some good 'ol stuff coming. I have something quick, simple and so delicious for today. I love ice cream, and I will never say no to it, another thing that I love is juice & smoothies, and since things are starting to be back in season I picked up some fruit and made these little guys happen!

They are literally so easy to make, all you'll want to do is juice/blend any sort of fruit with water/coconut water/orange juice or whatever your heart desires. Then you'll want to cut up some fruit, stick 'em all in the little pop containers and BOOM! you are almost done. Just freeze and in a couple of hours you will have some refreshing summer treats. 


these ones are honeydew melon blended with water with pineapple & peaches bits, as well as some blueberries & kiwi slices. 


This one is a strawberry puree with blueberries, mango & peach chunks. 


From top to bottom: Honeydew, strawberry puree & papaya mixed with some cantaloupe.

Sunday Smoothie Day




I have been slacking big time with my smoothies. I have been slacking with being healthy in general. So today I decided to get myself back on track. 

I blended one frozen banana, a cup of mixed mangoes, peaches & pineapple, a handful of kale and some spinach as well. Half a grapefruit and some water to blend. I added some maca powder, some nutrivitae plus blend and an omega blend as well, this one has flax & chia seeds as well as brown rice. It keeps you full!
I then sprinkled some hemp & chia seeds.

My Day in Pictures | Breakfast & More!










Banana Chocolate Chip Oatmeal:
1 cup of whole oats
1 tsp of dark chocolate chocolate chips
1 banana
1 cup of almond milk + a couple tablespoons just so its not too dry
I topped mine with strawberries, raspberries & green apple!

Toasty Bagel
**the amount that I made was not all for me**
1 cup of cooked black beans
1/2 cup of chorizo or any kind of sausage
some onions, peppers & cilantro for taste
I took a fork and kind of just "smooshed" it all together
I used half a whole wheat bagel & topped it with some feta cheese!

Tropical Smoothie
1 cup of tropical fruity mix (pineapples, peaches, strawberries, grapes & mangoes) 
1 banana
The juice of 1 ruby grape fruit
1 cup or so of water to blend 

Fruity water
1 Kiwi
1 big strawberry
a handful of black berries & rasp berries
1 tablespoon of chia seeds
3 slices of grapefruit

Peachy Cake

I hope everyone had a good Easter! Sorry I have been MIA for a couple of weeks now, I have been so busy lately, and that it will continue to be like that for the next two weeks. This semester has flown by, it's crazy. 
this year for Easter I decided to make something. It is my first year in three years that I do not work on Easter. Luckily I got two Easters this year. My boyfriend's mom invited me over for Sunday, and Saturday my family celebrated it, since it was one of those days that we could actually get the family together. It all worked out perfectly, until I decided to use spray butter instead of actually buttering the pans...my cakes fell apart and I had to re do it all over again. Yes, I was mad & frustrated but I think everything worked out nicely in the end. 
The recipe was inspired by 10thkitchen & and the actual cake recipe I cannot remember where I got it from, but I threw a couple things together and it worked out nicely! At least I'd like to think so.


For the cake:
**I made two cakes so I doubled everything below...
I bought a cake mix from a natural food market near me & used 2 1/2 cups of it.
1 cup of peach extract
1 tablespoon of vanilla
1/3 cup of coconut oil 
3 eggs

I separated the egg yolks and the whites, I whisked the egg whites until they formed peaks. I blended everything together & then folded in the egg whites. This made the cake a lot fluffier!
This was in the oven for about 18 minutes or so in 350 degrees, I was constantly checking on it because I was too anxious! OH and do not forget to butter da pan... things will go butter if you do!

For the Icing:
8 oz of cream cheese
1 3/4 cup of heavy cream
1/2 cup of granulated sugar
1 teaspoon of vanilla

**The trick to know when the icing is good is when it starts to form peaks, or when the icing stays on the cake spatula without sliding off. **

I filled in the cake with teeny tiny pieces of peaches, yes I cut them up really small. The own juice from the peaches got into the cake and it made it pretty moist, but not to the point where it was saggy!

Dessert | Coconut Rum Cake With Dulce de Leche Filling








For the cake:
  • 1 box of Duncan Hines cake mix - I picked up the French vanilla one, anyone could work
  • Three eggs
  • 1 cup of coconut cream or milk
  • 1/4 cup of Rumchata or any kind of rum you prefer
  • 1/3 cup of cup of coconut oil
Blend all ingredients together until there are no flour lumps and the batter is smooth
Bake at 350 degrees Fahrenheit for about 20 minutes in two small round pans, this depends on the size you'd like to make your cake. They were baked in about 20-25 minutes & cooled for about 15 minutes on a cooling rack.

For the filling

For the frosting
  • 16 oz of cream cheese
  • 1 table spoon of vanilla extract
  • granulated sugar - added this until it was the right "sweet"
  • 3 Tablespoons of Rumchata, any other kind of rum is fine

P.s. I played around with the frosting until it was good enough for me. You will want to keep it cold otherwise once you begin to decorate the cake the frosting will not come out the way you want.

P.s.s. This cake will also look great with roasted coconut shavings on top! The fruit was a last minute decision, but it came out great!

Breakfast | Oatmeal Pancakes

It finally feels like spring! All the annual flowers have begun to bloom & my tulips are looking great! I've been feeling like I should get back on my healthy kick, so I decided to start off the day with a different view on oatmeal. Don't get me wrong, sometimes I do like to have some oatmeal for breakfast, but having the same thing everyday can quickly get to me. So last night I searched for the healthiest oatmeal pancakes. So this morning I decided to take over the kitchen...

I know this is a very odd angle but... it works!


Oatmeal Pancakes: Yields about 8 small pancakes
1 cup of oats
1 cup of coconut flower
1/4 of a cup of bisquick 
1 1/2 of Original Soy Milk
1 large egg
1 tbsp of vanilla extract
1 tbsp of raw brown sugar
& a dash of cinnamon

Aside from loading my pancakes with fruit I drizzled a bit of organic maple syrup on them!

1. English is my second language. I was born and raised in Costa Rica and moved to the US almost 10 years ago.
2. I have a boyfriend and he is the most wonderful guy that I have ever met. I feel **eh hem** I mean I AM the luckiest girl to have him.
3. I have two best friends, I am not the type of person to have tons of friends.
4. I work at a law firm which is kind of funny because I am studying business, which has nothing to do with law, but hey, who cares?!
5. I am a nervous person, I bite my nails, pick at my make up, tap on everything, click pens whenever I have them in my hand & a bunch of other stuff.
6. I am 5 ft tall, some like to say other wise but I will always stand tall just so I can maybe be a little taller.
7. I sleep with four stuffed animals, a duck, a lion, a polar bear & a birthday party bear. All have been given to me by my boyfriend.
8. I have a sister and a brother & I am the oldest.
9. Tulips are my favorite flowers of all time.
10. I like to meditate whenever I have the chance to.
11. Spring & fall are my favorite seasons.
12. Hikes are my favorite especially with my boyfriend, since he always knows where he is going.
