Breakfast | Tropical Smoothie Bowl

There is nowhere else I'd rather be than to be somewhere tropical right now. This morning I woke up to go to school and it was hailing. Ridiculous. Although it's cold I still wanted a smoothie bowl, which did leave me shaking from the cold for a while. 
This is such a quick thing to do, and it's so filling. At least for me it is. 

I used 1 1/2 cups of a frozen tropical mix. It has peaches, mangoes, pineapple, grapes & strawberries. Which is what gives the smoothie that pretty pink color.
I added a teaspoon of raw maca powder & about a cup of water to blend. 

I chopped up half a mango & half a banana, and then added a tablespoon of chia seeds.

Sunday Craft Day | Bird Houses

It's already spring time here in Jersey, sadly the weather does not want to cooperate, it seems as if it is still stuck on winter. Anyway, my mom and I have been planning ideas for her garden this year, we went and bought seeds for all sorts of flowers last week, and then we decided to stop at Michaels... now that never goes as planned, we spent more than we were planning on and we left with a lot more than we needed. Though this was a great idea, we decided to get bird houses, they were pretty cheap...less than $10 and they have so many different ones, we could not just leave with one each. We got some primer, paint, a pack of brushes and a sealer to seal the paint so in the summer time nothing will wear the color of the houses off. This did take a couple of hours, it takes some patience as well...the paint does not take too long to dry but if you are anything like me and decide you want a little challenge and decide to go with something that will take time...prepare to spend hours painting. It's a good way to pass time. But anyway, this is how they came out! 


 After we painted them we decided to jazz 'em up a bit, so we added some little flowers and leaves I took from floral decors my mom has around the house.

Afternoon Tea | Pineapple Upside-Down Cake & Minis

Today happens to be a very gloomy day, and I have not been feeling oh so very well, so tea happens to cure everything, and what better way to have tea than with a little pineapple upside-down cup cake?

Ingredients:
For the topping you will need...
1 (20 ounce) can of pineapple rounds
1 can of cherries
1 stick (1/2 cup) of butter
1 cup of brown sugar

You will need to melt the butter, it did it at the lowest heat so it took a couple of minutes, once it is melted set it aside and then slowly add the brown sugar. I used sugar in the raw, once you have that done you will want to place about a tablespoon of the mix onto your cupcake pan. You will then want to cut the pineapple rounds into smaller pieces and place them like below.


Ingredients for the batter:
1 package of yellow cake mix
3 egg yolks & 4 egg whites
1/2 cup of coconut oil
1 cup of pineapple juice
1 tablespoon of chia seeds


I placed everything in a large bowl and beat it for about two minutes at medium speed. 

I then poured it over the pineapple and sugar mix. 
This was in the oven for about 15 minutes, or until it passed the tooth pick test.


I still had cake batter left over, and I did not want to wait for the cupcakes to cool in their pan to make the next batch, so I played around with the pineapples and the cherries and it came out looking a little fancy.

Stuffed Lasagna Shells

How about we talk about a serious taste of heaven? I recently saw this recipe roaming around the internet, and I had to give it a try. The recipe will be below, so first enjoy all these pictures of these amazing little guys.

So here is how it went...
I started out with a pound of ground beef, chopped about half an onion, three garlic cloves, three little sweet peppers, half a cup of cilantro, about a tablespoon of  olive oil, a table spoon of Salsa Lizano (this is the secret weapon of every Costa Rican--this is optional) a pinch of salt and a little pack of Goya Sazon. I let this cook for a couple of minutes, and was constantly stirring it.
Once it was cooked I decided to add more peppers and cilantro, the more flavor the better. 
While I had the meat cooking I had the shells in the water as well, I made about 24 shells. 
The only preppin' I had left before the stuffin' was the sauce. Now, I like to opt for home made sauces, but today I felt like being lazy so I used a jar of Bertolli's tomatoe & basil sauce. I chopped half an onion, two garlic cloves and a little cilantro, I then sauteed it and added the sauce. I let this sit for a couple of minutes.
I stuffed the shells and added spinach to some, just to add some healthy stuff to it. I cover the shells in sauce and then top them off with cheese...lots and lots of cheese.
I put these in the oven for a couple of minutes, just to let the cheese melt and get a little golden color to it. 
This took me about half an hour maybe, if you have everything going on at once and are able to keep an eye on everything it should not take too long.

Smoothie Lovin'

I go through my smoothie cravings. I have a smoothie just about every day, twice a day. I can easily get sick of having the same thing over and over and over, but there are so many different options and the possibilities are endless. These are three of my favorite. 



 The green smoothie:
A cup of spinach, half a peach, half a green apple, half a pear, 1/2 cup of frozen mango chunks, half a banana & the juice of a large orange. 
I also added water to it since the juice of an orange may not be enough.
I also threw in a tablespoon of chia seeds & a teaspoon of raw maca powder. 

The pink smoothie:
Five large strawberries, one frozen banana & a cup of almond milk.
I added raw maca powder to this one!

The purple smoothie:
A handful of blue berries, a cup of strawberries, 2 tablespoons of Chobani vanilla Greek yogurt & a cup of vanilla soy milk. I also added a tablespoon of chia seeds!

Hello and welcome!
My name is Kim, I am twenty years old and it has taken me a very long time to follow through with a "for real" blog. I've had a tumblr for a very long time now, a couple of years I'd say. Recently I have been so drawn to blogs, it's a way for me to be on top of things, and I love reading and being on the same page as everyone else, so I have decided to give this a go and see where it takes me. I don't know what it can come out of this, I do hope it is a positive outcome, I have a couple of things planned out so far, food related...because I love food...but once I get the hang of all of it, I definitely will expand and explore more into fashion and beauty.
